Longtail’s name, comes from the iconic Longtail boats, which travel the waterways of Vietnam, Thailand and Laos. This is a perfect reflection of both the cuisine Longtail offers, but also the experience across Asia that the team behind Longtail possesses.


Jongkolnee Thoboonme
 Commonly known as Ms. Noo, has been creating and serving authentic Thai food to Singaporeans since 1988 haviing been the driving force behind Thanying Restaurant. More recently she has been running Sabai Fine Thai on the Bay. She is famous for introducing many of the Thai favourites served throughout Singapore today. 
Jan-Peer Lehfeldt
Jan-Peer’s career has taken him all over Asia and Europe. His hospitality experience has been gained in the Raffles Hotel Group, Mandarin Oriental, Four Seasons Hotels and Resorts as well as opening Sabai Fine Thai on the Bay. Until recently, Jan-Peer was the opening GM of the newly established beach club “Sundara” at Four Seasons Resorts Bali at Jimbaran Bay. 
Chanida Sangngampal, Nickie
Nickie has a wealth of hospitality experience. She began by training at the prestigious Ecole Hôtelière de Lausanne in Switzerland. She has since worked for the Grand Hyatt Erawan Bangkok, Four Seasons Hotels and Resorts and Alila Villas Uluwatu.
